Print the snapshot page and have it laying on their desk for morning work (or use during your writing block.) They can draw pictures of everything they did and then write a paragraph to describe what they drew.
You can print the cover page and turn their writing into a class book. When there is time, they can choose to share their writing if they would like. This also allows you to read them on your own time when you can instead of taking up class time.
